Today i am sharing the recipe of mochar dhoka which i made a few days back . I always try to make something different for everyday cooking and this dhoka is a result of that.
‘Mocha’ or banana flower is one of the favourite vegetables in our house. Though it is laborious to peel banana flower but if some patience and time can be devoted wonderful vegetable can been cooked from it. I have shared different recipes with ‘Mocha’ like ‘Niramish Mochar Ghonto’, ‘Mochar Niramish Kofta Curry’, ‘Mochar Kofta Curry’, ‘Mochar Cutlet’, ‘Mochar Chop’, ‘Chingrimach Diya Mochar Ghonto’, ‘Mochar Paturi’ etc. You can check these recipes. Today I will be sharing one innovative recipe of mine, i.e. ‘Mochar Dhokar Dalna’. We all know ‘Dhokar Dalna’ is one of the popular vegetarian preparations of Bengali cuisine. I tried to club these two recipes together and truly it worth it. Please do try this recipe and let me know how you liked it!
Ingredients:
For making the fritter:
- Mocha or Banana Blossom – 1 cup (Boiled and finely chopped)
- Motor Dal or Split Yellow Pea – ½ cup
- Cholar Dal or Bengal Gram – ½ cup
- Green Chillies – 3-4 no.
- Ginger – ½ inch
- Hing or Asafetida – 1 pinch
- Turmeric Powder – ¼ tsp
- Garam Masala Powder – ½ tsp
- Sugar – ½ tsp
- Salt – To taste
- Oil – For frying the fritters
For making the curry:
- Bay Leaf – 2
- Cumin Seeds – ½ tsp
- Dried Red Chilli - 2
- Whole Garam Masala
- Potato – 2 (Cubed)
- Ginger Paste – 1 tsp
- Tomato – 1 (Finely chopped)
- Cumin Powder – 1 tsp
- Coriander Powder – 1 tsp
- Turmeric Powder – 1 tsp
- Red Chilli Powder – 1 tsp
- Garam Masala Powder – ½ tsp
- Ghee or Clarified Butter – 1 tsp
- Oil – 2-3 tsp
- Sugar – 1 tsp
- Salt – To taste
Method:
1. Take a Mocha(Banana Blossom) separated banana blossom florets from the petals and cleaned.
2. Chopped the florets and kept them in salt and turmeric water for 30 minutes.
3. Boil banana flower or mocha adding some turmeric powder and salt. Squeeze well and drain the water.
4. Soak both dal (lentil) together overnight or for at least 5-6 hours and then grind into smooth paste adding ginger, salt and little water or not.
5. Take the equal portion of lentil paste and boiled banana blossom. Grind the boiled banana blossom into smooth paste too.
6. Heat 2-3 tsp of oil and temper it with hing. Once they start to exude aroma add ground lentil and banana blossom paste.
7. Now add turmeric, salt and sugar. Saute till all water dries up. Keep sauteing till it start to release the side of the wok. Add garam masala powder and give a final mix.
8. Grease some oil on a plate and spread the mix on it. It should be 1” thick. Let it cool completely.
9. After it gets cooled completely cut it into square or diamond shape.
10. Heat some oil in a pan or kadai for deep frying. Now put the banana blossom cakes carefully in the oil and fry they turn brown on all sides and crisp. Take out from oil and put on absorbent paper.
12. Temper the oil with bay leaf, dried red chilli, whole garam masala and cumin seeds. Once the cumin seeds exudes aroma add ginger paste.
13. Next add chopped tomato and all the dry spices (cumin powder, coriander powder, red chilli powder, turmeric powder) except garam masala powder. Sauté till oil separates.
15. Add sufficient water to cook the potatoes. Adjust salt. Add green chilli. Cover and cook till the potatoes are almost done. Remove cover and add fried fritters.
16. Add clarified butter (ghee) and sprinkle garam masala powder and let it boil for a of minutes. These lentil fritter or ‘dhoka’ absorbs good amount of water, so add water accordingly. And adjust salt accordingly.
