Aloo Bhindi Bhaja – Potatoes And Okra Fry




This aloo bhindi recipe is a lightly spiced delicious dry curry made with okra, potatoes, and spices in an onion. Also, a vegan recipe, it is made in Bengali Style and goes very well with roti or paratha.

Furthermore, some easy and important tips, suggestions and variations for a perfect and tasty aloo bhindi recipe. Firstly, the potatoes may take longer time to cook, compared to bhindi. Hence I would recommend to make it thin or small cubes so that it does not take long time cook. Secondly, you need to take extra care while chopping and handling bhindi (okra). Do not bring it to the contact of moisture/water while chopping or cooking. it would release its latex when it is brought in contact with water.


How to make Aloo Bhindi Fry


Ingredients: 

  • Bhindi or Okra or Ladies Finger – 250 gm
  • Nigella Seeds or Kalo Jeera – ½ tsp
  • Dried Red Chilli - 1
  • Sliced Onion - 1 big
  • Turmeric Powder – ½ tsp
  • Green Chilli – 4 pcs
  • Mustard Oil – 3 tbsp
  • Sugar – To taste
  • Salt – To taste

Method


1. Take bhindi or okra or ladies finger and wash them properly.


2.  Pat dry the bhindi with a clean cloth or kitchen towel.


3.  Now cut the bhindi into small round shape.

TIP: Do not wash the bhindi or ladies finger after cutting. It would release its latex when it is brought in contact with water.


4. Peel and cube 2 medium size potatoes. Make smaller pieces as they will be quick to fry. 


5.  In a kadai or pan heat 3 tablespoons oil. Once the oil becomes medium hot then first add 1 dried red chilli and 1/2 tsp nigella seeds. Let them crackle. Then add 1 big sliced onion and 4 slited green chillies. Fry them for 1 minute.


6. Add the potatoes and fry with some salt. Potatoes fry for 3-4 minutes.


7.  Add the chopped bhindi or ladies fingers.


8.  Then add all the spice powders at this step.

  • Salt to taste
  • ½ teaspoon turmeric powder
  • Sugar to taste. Here I am using 1 sugar free tablet.

9.  Stir and mix well. Fry until all the potatoes and okra pieces are cooked completely and softened.


10. Serve bhindi aloo fry with roti and paratha. You can have it rice and dal also.
